For ten unforgettable days, join award-winning chef and Tara Kitchen founder Chef Aneesa Waheed as she returns to the country that inspired her life’s work. Traveling in a small group of only 14 guests, every meal becomes a conversation, and every stop becomes personal.
Day One NOVEMBER 22
Your Moroccan story begins in Casablanca — a city of wide boulevards, ocean light, and quiet grandeur.Upon arrival at Mohammed V Airport, you will be warmly welcomed by your professional driver and privately transferred to Barcelo Anfa Hotel for your check-in.After settling into your hotel, gather for the evening's Welcome Dinner at the iconic Rick's Café, the storied restaurant inspired by the beloved Hollywood classic.
Day TwoNovember 23
Begin the morning exploring the magnificent Hassan II Mosque, its minaret rising directly over the Atlantic.From there, travel through Morocco's countryside toward Fez, pausing at Villa Volubilia, a picturesque vineyard for a lunch paired with local wine. Will also experience a guided olive oil tasting: an introduction to the terroir and pressing traditions.Arrive in the ancient city royal city of Fez and settle into Riad Maison Bleue, tucked within the historic medina.
Day Three November 24
Today is devoted entirely to food and to the layered heritage behind it. Walk the legendary souks of Fez with Chef Aneesa as she shows you how to select spices, preserved lemons, olives, herbs, and the essential building blocks of Moroccan cooking on a guided food tasting tour through market stalls and neighborhood bakeries. Venture into the medina's Jewish heritage quarter - the Mellah - visiting its historic synagogues and learning how the city's Jewish community helped shape the culinary identity of Fez. That legacy comes full circle at dinner, hosted in a local Moroccan home, where you will savor an authentic chicken with preserved lemon tagine; a dish whose roots trace directly back to that same community.
Day Four November 25
We will visit the UNESCO World Heritage site of Volubilis, where Roman ruins tell the story of Morocco's place in the Mediterranean world more than 2,000 years ago. Continue to Moulay Idriss Zerhoun, for a couscous-making class and lunch: a hands-on look at the country's most iconic dish, prepared the traditional way. (Moulay Idriss Zerhoun is a sacred hillside town in northern Morocco famous for housing the tomb of Idris I, the great-grandson of the Prophet Muhammad and founder of the country's first major Islamic dynasty). Return to Fez to enjoy the city’s quiet atmosphere and spend the evening at your leisure.
Day Five November 26
Breakfast in the mountain air before beginning one of the journey's great scenic drives: from the green cedar forests of the Middle Atlas mountains through vast high plateaus, the terrain growing drier and more dramatic with every passing hour. Pause in Midelt for lunch at a local farm.
By late afternoon, you have reached Merzouga, where the golden dunes of Erg Chebbi dessert rise up to 500 feet against the sky. We mount our camel and ride into the desert. Arrive at our luxury camp to a welcome of mint tea before sitting down to dinner under the stars.

Day SixNovember 27
Breakfast at camp as the desert light shifts from violet to gold across the dunes, before departing Merzouga and traveling westward. Along the way,
take a short hike through Amazigh villages and family farms, meeting the people who still work this land with the same tools and rhythms their
grandparents used.
Continue on to Ouarzazate, Morocco's gateway to the south, a garrison town turned film capital, surrounded by some of the country's most dramatic desert scenery.

Day Seven November 28
Begin with a visit to the kasbah of Aït Ben Haddou: the UNESCO- listed fortified village of red-gold earthen towers that has served as a backdrop for films from Lawrence of Arabia to Gladiator.
Walk through its ancient lanes and climb to the granary at the summit for sweeping views across the valley. Here, join a local women's association
for a hands-on lesson in making baghrir also known as the 1000 hole pancakes. Then comes the day's dramatic centerpiece: the crossing of the High Atlas Mountains via the Tizi n' Tichka Pass before a different Morocco appears on the horizon: Marrakech, the Red City, glowing in the last light.

Day Eight November 29
Breakfast at the hotel before stepping into what is, in many ways, the heart of the entire journey. Spend the morning exploring Marrakech's famous spice markets alongside Chef Aneesa.
In the late afternoon, the group gathers in a kitchen for a private cooking class with Chef LAMAI Under her guidance, learn how generations of Moroccan cooks build depth through spice, preserved lemon, and olive oil. Share the meal together as a group.
This is the day where everything you have tasted, discussed, and discovered across the journey comes together.

Day Nine November 30
Breakfast at the hotel before travelling into the beautiful Ourika Valley — a lush, green corridor that cuts into the foothills of the High Atlas just thirty
minutes from Marrakech's city walls. Visit local farms, bake traditional bread in an outdoor clay oven, and prepare a farm-to-table lunch surrounded by terraced gardens and the sound of the river below.
Return to the city in the afternoon for a traditional hammam experience. It is not a spa treatment. It is something older and more honest than that: a way of slowing down, of letting the body catch up with everything the mind has taken in.
The evening closes with an elegant final group Dinner at Dar Soukkar, celebrating the friendships, flavors, and memories built throughout the journey.

Day Ten December 1
Breakfast at the hotel. One last spread of warm msemen, fresh pastries, local honey, olives, seasonal fruit, and mint tea. There is something bittersweet
about the final Moroccan breakfast, when you realise you have learned to love a meal you didn't know existed ten days ago.
Spend the morning shopping in the souks for the last treasures: spices to take home, a hand-carved bowl, a leather bag, a bottle of argan oil, or wander through Marrakech with no agenda and nowhere to be. The rooftop cafés, the garden courtyards, the light falling through carved plaster screens, let the city leave its last impressions.
The evening is free, a final night in a place that already feels like it belongs to you.

Day Eleven December 2
After a final breakfast, transfer to Marrakech Airport for the journey home.
You will carry with you more than photographs and souvenirs. You will carry the scent of cumin and cedar. The taste of preserved lemon. The sound of a copper hammer in a Fez alleyway. The silence of the Sahara at night. The warmth of a stranger's home where you were welcomed to the table without hesitation.
